6oz self rasing flour
6oz caster sugar
1 jar shreddless marmalade
2 big bars dark chocolate (if making for the goddess's consumption check for lack of powdered milk) Scotmid's own is the best I have tried.
Beat the eggs till they are light and fluffy.
Sift in the sugar in bits and make sure it is well mixed.
Fold in the flour a bit at a time (carefully)
Grease a frying pan (9 inches in diameter)
Pop in the preheated oven (180 degrees) for between 15 and 25 minutes. (keep an eye on it)
Once sponge is cooked turn it upside down and wait till it is cooled.
spread marmalde in a circle in the middle of the cake 1 cm thick and 5 inches in diameter.
Melt chocolate and pour over marmalade and cake.
Wait till it is set and enjoy.
